Lazy sushi | Super easy vegan recipe
One of the things I love most about hosting couchsurfers is being able to learn new recipes from them. Last summer, a vegan couchsurfer made something he called “lazy sushi” at my place, and I thought it was ingenious.
Despite being meat-free, it really does have a sushi-like flavour. And it’s super easy to make—no fumbling with sushi rolling mats or dropping rice all over the floor.
Note: The original recipe did not include Japanese rice vinegar, but it does give the dish a more sushi-like feel.
Ingredients (2 servings):
- 1 cup of short or medium grain rice
- 1 cucumber
- 1 carrot
- 1 avocado
- 1 brick of firm tofu
- 1 sheet of dried seaweed (nori)
- 2 green onions or scallions
- Light soy sauce
- Rice vinegar (optional)
- Sugar
- Salt
You should be able to find dried seaweed (also known as nori) and rice vinegar at any Asian supermarket.
Step 1
Cook the rice in a pan or rice cooker. If you’d like the dish served cold, refrigerate the rice for at least an hour when it’s cooked. (I usually don’t out of hunger and laziness.)
Step 2
While the rice is cooking, cut the cucumber and carrots into 1.5cm pieces.
Step 3
Dice the green onion leaves.
Step 4
Cut the tofu into cubes measuring about 2cm across.
Step 5
Take the rice out of the rice cooker and transfer it into a salad bowl. Using a wooden spoon, hollow out the rice starting from the middle, so as much rice as possible sticks to the sides of the bowl. This will help the rice to cool down faster.
Step 6
In a cup or glass, add four spoonfuls of vinegar, 1 spoonful of sugar and a dash of salt to taste.
Step 7
Add the cucumber, carrot, green onions and vinegar to the rice and mix well with a spoon.
Step 8
Spoon the avocado into the rice, breaking it up into tiny pieces as you go along.
Step 9
Tear the nori sheet into tiny pieces and sprinkle it over the rice.
Step 11
Before eating, stir in some soy sauce and add the tofu to each individual serving. (Adding the tofu to the rice just before eating ensures that it doesn’t disintegrate.)
